MANILA, Philippines — The Raisin Administrative Committee (RAC) recently staged an event, “Sip, Savor and Sweeten: Hi-Tea with California Raisins,” at Sawsaw in Makati City to demonstrate the versatility of California Raisins.
During the event, fashion stylist and mom Jenni Epperson shared the spotlight with celebrity chefs Sau del Rosario and Miko Aspiras as well as share her recipe, California Raisins and Beef Tacos Stuffed Bell Peppers.

California Raisins & Beef Tacos Stuffed Bell Peppers
INGREDIENTS:
For the filling:
1/2 cup California Raisins
3 pcs. large bell peppers (red, green, and yellow), cut into halves
500 grams ground beef
1 cup onions, finely chopped
1/2 cup carrots, finely chopped
2 tsps. cumin
3 tsps. chili powder
1/2 tsp. chili flakes
1/2 cup Mozzarella cheese, shredded
1/2 cup Cheddar cheese, shredded
Salt and pepper to taste
For the garnishing:
1 sprig cilantro, freshly chopped
For the sides:
Salsa
Guacamole
Sour cream
PROCEDURE:
1. Prepare the filling. In a skillet, brown the ground beef over medium heat. Add chopped onions and cook until translucent. Add cumin, chili powder, chili flakes, salt, pepper, chopped carrots and California Raisins. Mix well and cook until the beef is fully cooked.
2. Prepare the bell peppers. Cut the bell peppers in half, lengthwise, removing seeds and membranes. Preheat oven or air fryer to 375°F.
3. Stuff the bell peppers. Fill each bell pepper halfway with the prepared beef and California Raisin mixture. Top each stuffed pepper with shredded cheese.
4. If you’re cooking in an oven, place the stuffed bell peppers on a baking sheet or a cast-iron pan. Bake in preheated oven for 10 to 15 minutes or until the peppers are tender and the cheese is melted and bubbly. If you’re cooking in an air frye, arrange the stuffed bell peppers inside the air fryer basket. Make sure they are not overcrowded. Air fry for 15 to 20 minutes, or until the peppers are tender and the cheese is golden and melted.
5. Once cooked, remove from oven or air fryer. Garnish with fresh herbs or additional cheese, if desired. Serve with sides, such as salsa, guacamole, sour cream, and/or freshly chopped cilantro.
