Peanut Sauce Noodles are creamy, saucy and easy to throw together! Made with peanut butter, soy sauce, lime and red peppers they are full of flavor too!

If you’re in a hurry and looking for a quick vegetarian meal to whip up, you’ve got to try these Peanut Sauce Noodles. The whole thing can come together in the time it takes to boil the noodles. This makes them the perfect weeknight meal or lunch.

And bonus, these are even good cold so make them ahead and eat them the next day.

Let’s talk about what you’re going to need to make them.

Peanut Sauce Noodles Ingredients:

  • NOODLES: You can use just about any noodles for this recipe. I’ve made it with udon and lo mein noodles and both worked great. If you need gluten free, use rice noodles. And in a pinch, spaghetti noodles would work just fine.
  • PEANUT BUTTER: I use Natural Creamy Peanut Butter which tends have a little less salt than other varieties of peanut butter.
  • DARK SOY SAUCE: Dark soy sauce has a more concentrated flavor and is a little bit sweeter than regular soy sauce. It also adds a darker color.
  • WATER: Will help to thin out the peanut butter.
  • SESAME OIL: Adds a nutty flavor.
  • BROWN SUGAR: Will add a touch of sweetness.
  • LIME JUICE: Will add a bit of acidity and brightness to the peanut sauce.
  • CRUSHED RED PEPPER: Optional but I like to add it because it adds a touch of heat.
  • GREEN ONIONS: Add texture and a subtle oniony flavor.
  • CILANTRO: Optional but adds a nice pop of color as a garnish.

Making Peanut Sauce Noodles could not be easier! You only need two steps to get this dish on the table! Follow along with these photos.

  • STEP #1: Cook noodles according to package directions and drain.
  • STEP #2: While noodles are cooking make the sauce. Whisk together peanut butter, soy sauce, sesame oil, brown sugar, lime juice and crushed red peppers. Add 1/3 cup of the water. Whisk until smooth. If sauce seems too thick, add more water.
  • STEP #3: Place drained noodles in a large bowl, add sauce, cilantro and green onions. Toss to coat noodles completely in sauce. Serve.

These noodles are creamiest when they are served right away, but they are excellent cold too. If the noodles seem a bit dry after they have cooled add a bit of water, a tablespoon at a time, until the sauce becomes creamy again.

Storage and Leftovers:

Will keep for a few days in the refrigerator. Again, they are great cold but you can warm them up with a zap in the microwave.

Ingredients

  • 10 ounces lo-mein noodles or other noodles such as udon, yakisoba or spaghetti
  • 1/2 cup natural peanut butter creamy
  • 2 tablespoons sesame oil
  • 2 tabelspoons lime juice
  • 1 tablespoon dark soy sauce
  • 1 tablespoon brown sugar
  • 1/4 teaspoon crushed red pepper
  • 1/2 cup water
  • 2 green onions diced
  • 2 tablespoons cilantro chopped

Instructions

  • Cook noodles according to package directions. Drain.
  • While noodles are cooking whisk together peanut butter, sesame oil, lime juice, dark soy sauce, brown sugar and crushed red pepper. Add 1/3 cup water. Whisk until smooth. If sauce appears to thick, thin out with remaining water.
  • Place drained noodles in a large bowl and add peanut sauce, green onions and cilantro (if using). Toss until noodles are completely coated in sauce. Serve and store any leftovers in the refrigerator.
