The restaurant that for 15 years served indulgent burgers and over-the-top milkshakes will be revived off-Strip this spring, with the menu items that had made it a memorable restaurant in the first place. Holsteins will open this spring in the Las Vegas Arts District at 1216 South Main Street, next to the Velveteen Rabbit cocktail bar. The 2,800-square-foot Holsteins will feature original brickwork, industrial concrete floors, and a long bar. In a news release, founder Billy Richardson, stated, “Downtown Las Vegas holds a special place in my heart and we’re excited to bring Holsteins to the neighborhood.” MGM Resorts International Holstein’s Shakes & Buns at the Cosmopolitan. The restaurant will predominantly serve burgers — like a dry-aged burger with smoked bacon, aged goat cheese, and truffle mayo and another with kalbi glaze, crispy yams, nori furikake, tempura avocado, and spicy mayo. The bar will blend boozy shakes like a Campfire S’mores shake that combines chocolate sauce, marshmallow vodka, and graham cracker crumble. The bar will also serve signature cocktails and a rotating selection of craft beers on tap. When it debuts in spring 2025, Holsteins will be open daily for lunch and dinner.
